Vegan Cheesy Olive Crackers With Kalamata Olives on Triscuits

Recently, I’ve been trying out more vegan recipes. Some with more success than others – LOL!

One new vegan food item that my wife and I have been experimenting with is sliced non-dairy cheese.

In the past year or so it seems that there has been an ever-expanding selection of non-dairy cheeses and other vegan products at our local grocery store.

I like to use Follow-Your-Heart White American non-dairy cheese slices, but any vegan cheese that comes sliced is perfectly acceptable.

For the crackers, I decided to use Triscuits.

The next step in developing this appetizer recipe was to find out which, if any, Triscuit Flavors were considered vegan.

Luckily, according to the article Are Triscuits Vegan? I discovered that my favorite variety of Triscuits, their Rosemary & Olive Oil Flavor, ARE considered vegan.

The final ingredient is my favorite type of olive, Pearl’s Greek Kalamata Olives (pitted).

Pearls Organic Pitted Kalamata Olives

You’ll want to use pitted olives so that you can slice them in half, easily.

This is important in order for the olives to rest on top of the crackers without rolling off.

This is a great, low-carb appetizer recipe that is quick, healthy and vegan.

Melted non-dairy Follow-Your-Heart American cheese with Pearls Kalamata Olives on Rosemary & Olive Oil Triscuits. This recipe calls for non-dairy cheese slices and uses one of the several vegan varieties of Triscuits. This three ingredient recipe is great for any season and perfectly suited for anyone following a vegan diet.

Ingredients

  • 2 Slices Non-Dairy Cheese

  • 12 Single Rosemary & Olive Oil Triscuits

  • 6 Individual Kalamata Olives (Pitted)

Directions

  • Place twelve (12) whole Rosemary & Olive Oil Triscuits on a pizza baking pan
  • Separate the full non-dairy cheese slices into smaller pieces that are roughly the same size as each individual cracker and place on crackers.
  • Pre-Heat Over to 350 degrees farenheit
  • Place pizza baking pan in over WHILE it pre-heats (for about 5-6 minutes)
  • Using an oven mitt, remove tray once cheese is melted (there is no need to pre-heat the oven all the way to the desired temperature as the cheese will be melted long before this occurs)
  • Slice pitted Kalamata Greek olives into halves
  • Place olive halves on top of melted cheese with the flat side of olives facing down

Notes

  • Use pitted olives so that they are easy to slice into halves
  • Try other vegan flavors of Triscuits (but remember not all Triscuit flavors are vegan!)
  • Place baking sheet in over during the pre-heating process for maximum time savings!
