If you love shrimp as much as I do and have a few cucumbers left over from the delicious, refreshing chilled cucumber soup with mint recipe we made a little while ago, then I have a good use for them.
My Cucumber Shrimp Seafood Spread!

And this is so easy, delicious, and low calories that you can eat a LOT of it WITHOUT feeling guilty…at least I don’t 🙂
You probably have most of the ingredients already so this is also a great recipe if you don’t want to do a lot of shopping!
Heck, most of the time all I really need to pick up at the grocery store are the shrimp.
I like to buy pre-cooked shrimp whenever I make this awesome cucumber-shrimp spread for the time it saves me, but if you have the time and inclination to cook the shrimp yourself, nothing beats fresh shrimp!
I’ll also swap out different types of crackers or serve on rye bread or, if I’m feeling really adventurous, on my famous french bread crostinis.

Servings: 1 1/4 cups (20 servings)
Prep Time: 15 minutes
What You Need:
- 1 tablespoon chopped onion
- 1/4 cup chopped cucumber
- 1 3-oz package of softened cream cheese
- 2 tablespoons mayonnaise
- 1 tablespoon catsup
- 1 teaspoon mustard
- pinch of garlic powder
- 1 cup cooked shrimp, peeled and chopped
- choice of crackers
What You Do:
- Blend mayonnaise, catsup, mustard, garlic powder, and cream cheese together in a mixing bowl.
- Add in cucumber, shrimp, and onion. Mix well.
- Spread mixture on crackers and serve.
