Anytime I can find a way to include maple syrup in any recipe I am a happy camper!
This maple walnut chicken dish combines, both, sweet and savory elements for a total taste explosion.
The real secret to this recipe are some of the ‘optional’ ingredients I mention below. The cream cheese and dried cranberries are NOT optional when I make this dish!
But I realize that not everybody likes cream cheese and raisins/cranberries so I included these as optional ingredients.
I must warn you, though, these elements provide a balance to the maple syrup and I think without the cream cheese and, either, dried cranberries or raisins, this dish can seem overly sweet.

I’ll leave the final decision up to you as to which ingredients you choose to use or omit.

Prep Time: 5 minutes
Cook Time: 25 minutes
What You Need:
- 4 chicken breast halves
- 3 tablespoons maple syrup
- 5 tablespoons cider vinegar
- 1 tablespoon extra virgin olive oil
- 1 tablespoon fresh thyme leaves
- 1/2 cup walnuts
- 1/2 cup water
- 1/2 cup raisins or dried cranberries (optional)
- 1/4 teaspoon of McCormick table ground black pepper
- 1 bag (9 oz) of spinach
- Fat-free cream cheese (optional)
What You Do:
- Prepare chicken with olive oil, thyme, and black pepper by rubbing ingredients onto chicken.
- Toast walnuts on medium heat for 2 -3 minutes in a non-stick skillet like this one, stirring occasionally.
- Add chicken and cook about 12 minutes, turning frequently.
- Place fresh spinach on 4 dinner plates and top with the chicken and walnuts.
- In skillet add your 5 tablespoons of cider vinegar and cook 1 minute. Then add maple syrup and 1/2 cup of water and simmer for about 6 minutes until thickened.
- Pour maple mixture over chicken and add dollops of cream cheese and raisins or dried cranberries to garnish (optional.)
