Super Bowl Nachos

Servings: 8 – 10

Prep Time: 10 minutes

Bake Time: 15 minutes

What You Need:

  • a bag of nacho corn chips (any variety)
  • a medium package of shredded cheddar or Monterrey jack cheese
  • medium can of refried or pinto beans
  • small onion
  • small green pepper
  • a jalapeno pepper, sliced (optional)
  • salsa (optional)
  • low-fat sour cream (optional)

What You Do:

  1. Preheat oven to 400 degrees.
  2. Chop onion and green pepper to make about 1/2 cup each.
  3. Place nacho chips evenly on a large baking sheet.
  4. Top with beans.
  5. Sprinkle cheese generously over the nachos and bake for about 15 minutes.
  6. Add salsa, jalapeno pepper, and/or sour cream to top of baked nachos (optional.)


Crockpot Cranberry Pork Chops

Servings: 4

Prep Time: 10 minutes

Cook Time: 4 hours /high or 8 hours/low

What You Need:

  • 1 16-oz can of cranberry sauce (whole or pureed)
  • 4 medium-sized lean pork tenderloin chops (bone-in or boneless)
  • 1/2 cup walnuts

What You Do:

  1. Place chops in bottom of crockpot.
  2. Top with cranberry sauce, spreading over chops.
  3. Add walnuts.
  4. Cook on high for 4 hours or on low for 8 hours and occasionally stir to dissolve cranberry sauce.


Servings: 6 – 8

Prep Time: 15 minutes

Bake Time: 40 – 50 minutes

What You Need:

  • 1 double-layer 9″ pie crust
  • 2 cups frozen mixed vegetables, thawed
  • 1 cup uncooked cubed potatoes
  • 2 cups cubed cooked chicken
  • 2 tablespoons chopped onion
  • 1- 10.75 oz can condensed cream of chicken soup
  • 1/2 cup milk

What You Do:

  1. Preheat oven to 400 degree Fahrenheit.
  2. Mix all ingredients thoroughly in a bowl and pour into the ready-made pie crust.
  3. Add top layer of pie crust and crimp edges to bottom layer.
  4. Poke fork holes or knife slits into the top crust for ventilation.
  5. Bake for 40 to 50 minutes.
