What You Need:
- a bag of nacho corn chips (any variety)
- a medium package of shredded cheddar or Monterrey jack cheese
- medium can of refried or pinto beans
- small onion
- small green pepper
- a jalapeno pepper, sliced (optional)
- salsa (optional)
- low-fat sour cream (optional)
What You Do:
- Preheat oven to 400 degrees.
- Chop onion and green pepper to make about 1/2 cup each.
- Place nacho chips evenly on a large baking sheet.
- Top with beans.
- Sprinkle cheese generously over the nachos and bake for about 15 minutes.
- Add salsa, jalapeno pepper, and/or sour cream to top of baked nachos (optional.)
