What You Need:

  • 2 cups flour
  • 2 eggs
  • 1 cup of canned pumpkin puree
  • 1 cup packed brown sugar
  • 1/2 cup milk
  • 1/2 cup shortening
  • 1/2 cup chopped walnuts (optional)
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground ginger

What You Do:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Mix brown sugar, cinnamon, baking powder, baking soda, nutmeg, ginger, and one cup of the flour in a bowl. And in milk, eggs, shortening, and pumpkin.
  3. Beat ingredients with a mixer on high speed for two minutes. Add in second cup of flour and beat again. Stir in optional walnuts.
  4. Pour batter into a greased 9 X 5 X 3-inch loaf pan and bake for one hour.
  5. Remove from oven and let cool for 10 minutes. Remove loaf from pan.
