<li style="text-align: right;">1 cup nonfat sour cream</li>
<li style="text-align: right;">2 plum tomatoes</li>
<li style="text-align: right;">2 scallions</li>
<li style="text-align: right;">cilantro&#8211; fresh or dried&#8211; to taste</li>
<li style="text-align: right;">1 cup of shredded cheddar cheese</li>

<li style="text-align: right;"><strong>What You Do:</strong></li>
</ul>
<ol>
<li style="text-align: right;">Preheat oven to 350 degrees Fahrenheit and grease a 13 x 9 x 2 inch baking sheet.</li>
<li style="text-align: right;">Chop tomatoes and scallions into small pieces.</li>
<li style="text-align: right;">Thoroughly blend sour cream and salsa in a small bowl.</li>
<li style="text-align: right;">Blend salsa mix and chicken and place an even amount in the center of each tortilla.</li>
<li style="text-align: right;">Roll up each tortilla and place on baking sheet.</li>
<li style="text-align: right;">Top with tomatoes, scallions, cilantro, and cheese.</li>
<li style="text-align: right;">Cover with foil and bake for 35 minutes.</li>

<li>3 tablespoons maple syrup</li>

<li>1 tablespoon fresh thyme leaves</li>
<li>1/2 cup walnuts</li>
<li>1/2 cup water</li>
<li>1/2 cup raisins or dried cranberries (optional)</li>
<li>1/4 teaspoon of black pepper</li>
<li>1 bag (9 oz) of spinach</li>
<li>Fat-free cream cheese (optional)</li>
</ul>
<p style="text-align: right;"><strong>What You Do:</strong></p>
<ol style="text-align: right;">
<li>Prepare chicken with olive oil, thyme, and black pepper by rubbing ingredients onto chicken.</li>
<li>Toast walnuts on medium heat for 2 -3  minutes in a non-stick skillet, stirring occasionally.</li>
<li>Add chicken and cook about 12 minutes, turning frequently.</li>
<li>Place fresh spinach on 4 dinner plates and top with the chicken and walnuts.</li>
<li>In skillet add vinegar and cook 1 minute. Then add maple syrup and 1/2 cup of water and simmer for about 6 minutes until thickened.</li>
<li>Pour maple mixture over chicken and add dollops of cream cheese and raisins or dried cranberries to garnish (optional.)</li>
