Mom’s Homemade Salsa

Servings: about 48 oz. (can be halved)

Prep Time: 20 minutes

Chill Time: one hour

What You Need:

  • 4 medium-sized tomatoes
  • 2 jalapeno peppers (more for hotter salsa)
  • 1 sweet vidalia onion
  • 1 small can chopped tomatoes
  • 1/2 package taco seasoning
  • fresh cilantro (to taste)
  • juice from one lime

What You Do:

  1. Chop tomatoes, onion, and cilantro into small pieces. Set aside.
  2. Wearing rubber gloves, carefully chop jalapeno peppers and remove seeds. Set aside.
  3. Squeeze juice from one lime into a medium-sized mixing bowl.
  4. Combine rest of ingredients in the bowl and mix well.
  5. Chill before serving.

Chill Time: 2 hours

What You Need:

  • 2 large cucumbers
  • 1/2 cup whole sour cream
  • 1/2 cup whole-milk Greek yogurt
  • 1 garlic clove
  • 1 tablespoon fresh dill
  • 2 cups vegetable broth
  • salt and white pepper (to taste)
  • fresh mint leaves (optional)

What You Do:

  1. Coarsely grate cucumbers into a bowl.
  2. Finely mince garlic clove and chop dill and add to bowl.
  3. Combine rest of the ingredients— except mint— in the bowl.
  4. Stir well and chill soup in fridge for approximately 2 hours.
  5. Ladle soup into serving bowls and top with optional mint leaves.
