Servings: 6 – 8

Prep Time: 15 minutes

Bake Time: 40 – 50 minutes

What You Need:

  • 1 double-layer 9″ pie crust
  • 2 cups frozen mixed vegetables, thawed
  • 1 cup uncooked cubed potatoes
  • 2 cups cubed cooked chicken
  • 2 tablespoons chopped onion
  • 1- 10.75 oz can condensed cream of chicken soup
  • 1/2 cup milk

What You Do:

  1. Preheat oven to 400 degree Fahrenheit.
  2. Mix all ingredients thoroughly in a bowl and pour into the ready-made pie crust.
  3. Add top layer of pie crust and crimp edges to bottom layer.
  4. Poke fork holes or knife slits into the top crust for ventilation.
  5. Bake for 40 to 50 minutes.

Hot Spiced Wine

Servings: 6 – 8

Prep Time: 10 minutes

Simmer Time: 4 hours (low) or 2 hours (high)

What You Need:

  • 3 apples, peeled and sliced
  • 3 whole cloves
  • 2 bottles of dry red wine
  • 2 cinnamon sticks
  • 1 teaspoon lemon juice
  • 1/2 cup sugar

What You Do:

  1. Thoroughly mix all ingredients in a crockpot.
  2. Cover and heat on high for 2 hours or on low for 4 hours.
  3. Remove cloves and cinnamon sticks and serve from crockpot into mugs.


Lucky Orange New Year’s Cake

Servings: 10

Prep Time: 15 – 20 minutes

Bake Time: one hour

Cool Time: 1/2 hour

What You Need:

  • 4 cups flour
  • 4 large eggs, separated
  • 4 teaspoons baking powder
  • 1 1/2 sticks (melted) butter
  • 1 cup sugar
  • 1 cup orange juice
  • 1/4 teaspoon baking soda
  • grated zest of one orange
  • grated zest of one lemon
  • slivered almonds (optional)

What You Do:

  1. Preheat oven to 375 degrees Fahrenheit and grease a 10-inch round cake pan.
  2. Beat egg yolks with sugar for about 3 minutes in a large bowl until light yellow. Add the butter and beat for another minute. Beat in the orange juice.
  3. Mix dry ingredients (excluding almonds) in another bowl and blend into the yolk mix.
  4. Beat egg whites separately until they form soft peaks, then fold them into the batter.
  5. Pour batter into cake pan and top with almonds.
  6. Bake cake for one hour and let cool before serving.
