Servings: 6
Prep Time: 10 minutes
Cook Time: 15 minutes
What You Need:
- 1 small onion, chopped
- 8 large eggs
- 1/4 cup diced cooked ham or prosciutto
- 1 tablespoon butter or stick margarine
- 1/2 teaspoon dried basil leaves
- 1/2 teaspoon dried mint leaves
- 1/2 teaspoon dried sage leaves
- 1 tablespoon freshly grated Parmesan cheese
- 1/4 teaspoon pepper
What You Do:
- Combine and beat all ingredients except butter, onion, and ham with a whisk.
- Stir in ham.
- Melt butter in medium skillet over medium heat.
- Stir in onion and cook 4 – 5 minutes.
- Reduce heat to medium-low and pour in egg mixture.
- Cover and cook another 9 – 10 minutes .
- Remove from heat and then cut into wedges.

What You Need:
- 3 oz. silver or gold tequila
- 1 oz. triple sec liqueur
- 2 oz. fresh lime juice
- coarse salt
- 1 fresh lime wedge
- 1 large cocktail glass
- ice cubes
What You Do:
- Run a lime wedge around the rim of a cocktail glass.
- Dip glass rim into a plate of coarse salt.
- Combine rest of ingredients in a cocktail shaker with ice.
- Shake well and strain into the glass, adding a lime wedge for garnishment.

Chill Time: 3-4 hours
What You Need:
- plastic freezer pop mold(s) *for 6 – 12 pops
- 1 bottle of fruit juice or instant lemonade
- 1 frozen bag of fruit (optional)
What You Do:
- Pour fruit juice into mold (s).
- Place pops in freezer.
- About 30 – 45 minutes into freezing, add frozen fruit to molds.
- Add plastic sticks with tops and continue to freeze until thoroughly solid (up to 4 hours.)
